Enjoyed a weekend hike

What a great weekend. Fri night Uncle James came down to spend the weekend with us. Saturday morning the boys and I got up and hit yard sales bright and early and came home to spend the rest of the day with James and Jaycie. It was a relaxing Sat with Steven and James trying to get the chainsaw working (which didn't work) doing a bit of garage clean up and just hanging out. James and Steven went to the store to buy dinner supplies armed with a recipe we found and printed off the net. Never tried it, never cooked it but decided it would be an adventure LOL They came home with all of the fixings for homemade fajitas. The men cooked away and we ended up with an excellent dinner that I *gasp* LIKED! I ate steak, green peppers, onions, mushrooms, avacado, sour cream, shredded cheese wrapped in a tortilla and beans and rice on the side. It was DELICIOUS! Who would have thought that I would like Green Peppers and Onions on anything! lol I guess my taste buds are growing up ;) The kids however had spaghettios ;) We decided rather then force them to eat something they didn't want we would save the yummy food for us and give them something we knew they would eat!
Here are the men preparing dinner.

Did I mention James was kind enough to buy ice cream for the kids and skinny cow ice cream mint sandwiches for him and I????? YUM what a perfect ending to the perfect dinner. While we stuffed our bellies to the brink of bursting we watched the movie "The Pursuit of Happiness" with Will Smith. Excellent Movie, touching, sad, so real ... I recommend watching it, but be prepared to think differently of people you see walking down the street or at work, you just never really know what is going on in someone's personal life....

Sunday we lazed around a bit and Steven and I cooked breakfast for everyone. We had pancakes, biscuits and gravy, sausage and eggs. This way James couldn't say he did all the cooking that weekend ;) That afternoon James headed home and the family met up with Eric and his sons and brother to go on a little hike. It was a gorgeous day and the boys had a wonderful time. We hiked around in the field for approx an hour and saw a dead porcupine and a dead coyote ribs hanging out and all. Steven told the boys that the mound of rocks was where Chief Hitachi was buried and they were full of questions that Steven couldn't answer since Chief Hitachi diesn't exist LOL It was a great afternoon and something we should definitely do more of! If only Kai's little legs were able to keep up a bit better...... ;)
